HOME MADE CARROT CAKE




 Carrot cake is in the category of cakes with vegetables: sounds healthy right..... But not so much. Carrot cake contains healthy ingredients, such as carrots and nuts but its also loaded with fat and sugar. Depending on the size of the cake, your piece could be anywhere between 600 calories.. 

But for some of us that love rich home made cakes: let's get the recipes

Ingredients 

Raw carrots                                340g

Flour.                                           2 cups (260g)

Eggs.                                             4 large ones

Baking soda.                                1tables spoon

Baking powder                            1.5 tables spoon

White sugar or caster sugar     1.5cups (300g)

Vegetable oil                                 1 cup (240ml)

Salt.                                                 1/2 tablespoon

Pecans or walnuts (optional)     1cup (100g)

Grand cinnamon                           1.5  table spoon

Pure vanilla extract                     2 tablespoon




Methods of preparation

1. Toast the pecans or walnut for about 8min or until lightly browned, let it cool and then chop coarsely. (If using) 

2. Peel and finely grate the carrot.

3. In a separate bowl, sieve together the flour, baking soda, salt and grounded cinnamon.

4. In another bowl or mixer, beat your eggs until fluffy, gradually add the sugar and beat until the batter is thick and light coloured about 3- 4mins. Add oil in a steady stream and then beat the vanilla extract.

5. Add the flour mixture and beat until they are properly mixed.  With a spatula, fold in the grated carrots and chopped nuts. Divide the batter between two pans and bake for 25 - 30 min depending on the settings of your oven. 

6. Allow to cool


This method can be used to make nut or coconut cake, just remove carrot and add coconut, walnut or groundnut or use both
